Caramelized Pearl Onions

This is an amazing and unique appetizer that can be made couple days ahead of your party.

1        pound frozen pearl onion, thawed

1/4   cup olive oil

1/2   cup sugar

1/8   teaspoon ground Annis seeds

1/8   teaspoon crushed red pepper

1       cup apple cider vinegar

-Heat the olive oil and saute the onion over low heat for 5 minutes.

-Add the sugar, Annis and the red pepper.  Cook and stir until the sugar is caramelized –dark gold– and the onions are darker and sticking to the pot.

-Add the vinegar and gently stir until the caramel is dissolved.  Simmer for 10 minutes and the sauce thicken.  Remove from the heat.  Cool and then serve.
