Bulgur and Romaine Lettuce Salad
This salad has everything, fiber, texture, flavor and full of nutrients. This salad can be full meal by itself and it is one of the few salads that tastes good for couple days.serves 4-61/2 cup coarse bulgur wheat, #31 cup cooked garbanzo beans8 leaves Romaine lettuce, chopped4 scallions, chopped2 medium tomatoes, diced1 punch Italian parsley, chopped1/2 cup coarsely chopped walnuts, toasted, optional1/2 cup lemon juice5 tablespoons olive oilzest of one lemonsalt to taste-Place the bulgur wheat in a bowl, cover with water and let it soak for 15 minutes. Squeeze excess water and place the bulgur in chilled salad bowl.-Add the garbanzo beans, the Romaine lettuce, the scallion, the tomatoes and the parsley.-Whisk the lemon juice with the olive oil, the lemon zest and the salt. Drizzle this dressing over the salad and toss well.-Sprinkle with the toasted walnuts and serve.
