"Use fresh fava beans for this delicious pilaf"
If you are looking for good and delicious plant protein, this easy pilaf is for you. Fava bean and rice pilaf is an excellent source of protein, carbohydrate, fiber,B vitamins, iron, Phosphorus and folate.
serves 46 cups fresh shelled fava beans1/4 cup olive oil2 cups basmati rice1/4 cup toasted pine nuts, optional1/2 cup chopped garlic chives, optionalsalt and black pepper to taste-Heat the olive oil in heavy pot. Add the fava beans and cook over medium heat for 10 minutes. Drizzle with little water to prevent sticking or burning the beans.-Add the rice, stir gently couple time and then, add 4 1/2 cups water, salt and black pepper.-Bring the mixture to a boil. Cover and cook over very low heat for 15 minutes. Turn the heat off and allow the pilaf to rest for 10 minutes before removing the lid.-Spoon the pilaf into serving platter, sprinkle with the toasted pine nuts and the chives.Would like to get more pilaf recipes?
