Summer Potato Salad

It is officially summer which means the opening season for picnics.  Whatever the menu in any picnic, there is always a potato salad on the table.  I pride myself of trying every dish that someone bring to a gathering, the only exception is the potato salad. Don't misunderstand me, I like potato salad like most people but I am always nervous when I see a mayonnaise loaded  salad simmering in the summer heat.Here is an easy refreshing potato salad that use olive oil and lemon juice for dressing which make it safe salad to accompany and grilling menu or picnic.Summer Potato Saladserves 44       medium salad1        medium ripe tomato diced1        medium sweet onion, finely chopped1        punch Italian parsley, choppedzest of one lemon1/4   cup lemon juice4       tablespoons olive oilsalt and pepper to taste-Boil the potatoes in water until they are cooked but not over cooked.  Remove from the stove and wash with cold water.-Peel the skin from the potatoes and cut into 1/2-inch cubes and place in a salad bowl.-Add the rest of the ingredients and toss gently.
